Dining review: Colorado Springs’ Red Gravy makes a splash

There’s more to Red Gravy Italian Bistro than marinara or Bolognese sauces, but the name is playful, especially considering the downtown restaurant’s logo: a red splat on a white background.
Although not as vivid in color, there are plenty of other sauces available along with a large selection of pasta, popular Italian entrees, and pizza.
It didn’t seem right not to sample something red, so we started with fried ravioli served with Bolognese. Ten dark-blond squares with crinkled edges are served with a small bowl of Bolognese for dipping. The sauce is meaty and rich. Crispy and stuffed with beef, this more than whets the appetite; it almost quells it all together. Fortunately, we didn’t stop there.

Blue at Red Gravy opens as new music-driven cocktail lounge

Five-year-old Red Gravy just expanded its offerings via Blue at Red Gravy (23 S. Tejon St., facebook.com/blueatredgravy), a live-music-driven cocktail lounge in the restaurant’s back area (in what was formerly banquet space; rear-entry after hours). It will be open from 5 p.m. to [10 p.m.], Thursdays through Saturdays, with shows from [8]-10 p.m. Fridays and Saturdays.
“I’m a musician also,” says Red Gravy chef/co-owner Eric Brenner, “and I have a lot of friends who are musicians who are still struggling from the loss of work during the pandemic.”

For years, Red Gravy has been serving the community, but now they’re serving them in a new way.
The Italian restaurant is providing meals to healthcare workers, first responders, emergency personnel and pivoting to online delivery.
Eric Brenner, chef and owner of Red Gravy, says it’s helped during these uncertain times.
“There were some weeks when we didn’t know if we were going to meet our basic needs,” said Brenner.

When restrictions to tame the spread of COVID––19 was first implemented, restaurants were hit hard and hit quickly. Dining rooms were closed overnight while business owners scrambled to retrofit a take-out business model to try to stay alive.
“Our dining room is now the entire city,” Eric Brenner said. “This new world has caused us, forced us really, to be innovative to find new ways to deliver the product, find new ways to get the product to customers, find new ways to get customers, and bring them to us.”

“We are trying to survive and help everyone at the same time. Putting our oxygen on ourselves before we help others … chefs are innately problems solvers, we’re savvy and we can get stuff done.”
That’s Red Gravy chef Eric Brenner, telling me how Chef José Andrés’ book We Fed an Island in-part inspired him to launch Meals to Heal, a local GoFundMe initiative to aid two frontline industries at once: the (overwhelmed) healthcare and (beleaguered) restaurant industries.
“This effort is designed to provide food for our healthcare workers, first responders and emergency services personnel while simultaneously supporting our restaurants and foodservice business community,” he explains on the page. He hopes to pioneer the model, then “try and export it to other interested restaurants.”
